You have a mis-conception many people seem to have at the start. If you select any of the lines, you will see that each one has a black stroke, and no fill. A curve in AD can be closed or unclosed. Both types can have 2 attributes, a fill and a stroke. In your work, you have all unclosed curves w. only a stroke attribute.It you click on any of them, and assign a fill, you will see a solid color that extends between the 1st and last nodes of the unclosed curve.
There is a way to remedy this, tho' it may seem a little complex. 
Select all the curves at once. Use the layer/expand stroke command. This will turn all the stroke attributes into individual black filled curves.  With them still all selected, use the geometry Add operation. This will create a layer called "curves." The spaces between the lines are empty, and not defined as vectors.
Next, use the geometry Divide operation. You will end up w.what appears to be a solid black silhouette. But note that there are now many curves, all black showing in the layer panel. You now have lines that can be colored, and shapes also. There will be some miniscule fragments left from the divide operation, which probably can all be discarded.

You can change the colour of the background by going to the main screen of the app > Settings > Interface > Background gray level . Bear in mind this only work on documents without an artboard. 
As for the other 2, you cannot change them. We logged an improvement request to add a new slider for artboards background.

You can't. Guides aren't part of the layer system. There is a Guides Manager to accurately position or delete guides and that's about it.

You have to switch over to the Photo Persona

@DesignMeister, you can use the flood select tool from Selection Persona to select all the white and then go back to the Photo persona, tap on the 3 dots on the top left corner > Pasteboard > Cut

An AI file needs to be saved with PDF compatibility. AD can only open the PDF portion of an AI file.

The best approach would be to create an artboard for each page. This way when you export ( as pdf ) each artboard will be one page, in a single multi-page pdf.

From your screenshot, it appears you already have a beta version installed, that being "1.6.1 (RC1)" for release candidate 1. Apparently that beta is trying to open your file, thus the warning.
So try this: right click on one of your Affinity Designer documents in Finder & check the "Open with ..." list that pops up. If you see more than one Affinity Designer item, or just the beta version, then you need to make sure you still have the current retail version installed, find the beta version, & move it to the trash.

It sounds like you are talking about the desktop apps. Since this is posted in the Affinity on iPad section, is that applicable for the iPad versions, & if so, how?

Affinity Photo and Designer iPad overlap for a good amount and we have decided to keep them together, just like we keep Photo and Designer for desktop together.

Welcome to Affinity Forums
You didn't specify which OS you are using/running but if it's macOS and you are working with a Macbook or have access to a trackpad you can go to Affinity Photo ▸ Preferences, Tools section and tick Enable Canvas Rotation with Trackpad. You can then use the trackpad to rotate the canvas freely.
[EDIT] I've just checked the video. Seems you are using Windows where this feature/option is not available.
