Indeed the regular single stroke and fill do not show in the Appearance Panel for text. I am creating styles for texts in illustrator and text must be editable so I can use it on whole graphic. The ‘shadows’ don’t look nice when zoomed in but it might be good enough for some purposes (maybe with some tweaking).
