I am unable to add additional strokes or fills to text.

Indeed the regular single stroke and fill do not show in the Appearance Panel for text.

I believe that I was able to do this during the Beta?

Same here in 1.7 it doesn't make any sense text is unable to have fills/strokes added from Appearance panel 

Given that the stroke control has gone from the text properties bar its really unclear how to add a text stroke now

It is already possible as a workaround (yes, the text is editable), for a direct method we have to wait for Serif.

Is there any updates on this? I can see the original fill/stroke for text in the appearance panel, but I can't add any more
It works on shapes... just not text

Hello. More appearance and appearance effects is must for designers. I am creating styles for texts in illustrator and text must be editable so I can use it on whole graphic. Adobe Illustrator have this great function and I can there use effects on the stroke or fill layers and create text styles.

In the meantime, it is already possible to add several outlines to text that remains editable.
Type the text, put an outline then an fx "Outline", group.
Put a second fx "Outline", group again, etc.

Alternatively, but on a similar theme, you could use something like what’s in my attached video.
The ‘shadows’ don’t look nice when zoomed in but it might be good enough for some purposes (maybe with some tweaking).
If we could add multiple strokes to text and give a stroke an offset distance+angle then we could easily make what bajqo gave us as an example (among other things).

It's possible with a compound object but would be nice if I could apply the appearance to text directly.
Since the dev team acknowledged this as a bug, I hope it will be fixed soon.
