The "Skip This Version" button just skips the update to v2.4 and stops displaying this message until a new version becomes available (ex 2.5). They could have (perhaps should have) named it Affinity Photo Two in order to avoid this confusion. All I can tell you is on Macs, in all the places I mentioned above, it is called "Affinity Photo 2." In fact, Terminal commands that do not include the 2 will either fail or open V1 if it installed.
