You can avoid this unwanted change if you click "Assign" when choosing a different document profile.
For export you can prevent this change if you export as PDF/X. This will write an 'Output Intent' to the PDF and maintain 100 K if the watching cmyk profile will be different to your document cmyk profile.

Thanks for the responses!
When I experiment with converting to different CMYK profiles, I now see that the text color jumps around to all kinds of different "rich blacks". Coming from another (Adobe) philosophy, I guess this is one of those Afffinity things to consider going forwards. Of course I normally want all text to default to 100 % K, regardless of any chosen (or changed) color profile.
I cannot upload the original file. But I attach something similar. I first thought that a svg logo was the only problem, as I turned out it actually was in rgb space. I then made an eps version, and made sure it was exported from a greyscale document in Designer, and sure enough it reports as greyscale in Publishers Resource Manager. But it still is seen on all plates. I'm tearing my hair out now. The greyscale tiff however (from Affinity Photo), for some reason (thank heaven), is only seen on the black plate, as it should. TIFF will be my workaround this evening.
BTW, found a nice online separations viewer for at least individual pages, like covers.

We are very happy with Affinity Publisher 1.7 and are moving towards the final stages for launch, but would still urge some caution with respect to using this version for critical work as it is still possible we may have missed something that may cause you issues.
That said, please note that we aren’t done yet - we are still working through reported bugs and hope to fix as many as possible before launch. After launch we will start a new Customer Beta for those who wish to have early access to on-going updates and fixes.
We hope you enjoy the product, and as always, if you've got any problems installing or running up, please don't hesitate to post in this thread.

New Features
Pinned Objects for Text
It is now possible to 'pin' objects to a specific location in the text flow. As text is edited and reflows, the object travels with its pin.
To access this feature you can use the 'Float with Text' or 'Inline with Text' buttons on the main toolbar. Further control of the object's placement is available via the 'Pinning Panel' (View > Studio > Pinning)
DocX Import
DocX is now offered as an option for import wherever txt and rtf were previously available (for example File > Place). It is chiefly designed with import of text content in mind.
Due to the wide variety of docx documents out there we will inevitably encounter issues and indeed there are features we won't initially support, for example:
- DrawingML
- Fields
- Footnotes and Endnotes
- Multi-page tables
If you have docx documents that are failing to import we would encourage you to share them with us if possible.

Hey I just wanna share a quick story of how I finished and printed 120 pages company catalogue inside Affinity Publisher Beta! [Yeah I'm crazy sometimes]
If Publisher devs would be interested I can provide three source files so they could use them for future bug squashing.
So let's start with the background - I started working for the company 1.5 yer ago as a marketing departament employee and my main focus was to gather new clients, but soon they discovered that I can quickly edit PDF files, tweak colors in photos and draw vectors - I used my personal copies of Photo and Designer for that. Later I officially become one and only company graphic.
Finally I got biggest project in my life: I had to make company catalogue - three bilingual versions Polish/English, German/English, Russian/ English with up to date content, products and photos. I had only compressed PDF file of the previous catalog project that I edited few times in Designer, but it was only for web use. When I was starting out the Publisher Beta wasn't even out yet. So I took the PDF to designer and started from converting Project to 400DPI CMYK, then replaced all photos with CMYK tiffs that I made with Photo Batch Work feature. Then I discovered that blacks should be changed to 100%K - huge pain in the a** because text boxes were bilingual and used two text colors. It took ages. Also Designer Artboards are cool but changing page order is a pain. And don't even get me started on page numbering : )
While I was working like crazy I got email with a link to Publisher Beta - this changed everything. It was early beta so I didn't trusted the software and I was right because it crashed like crazy - as beta should right? I got an idea that I would use publisher for page numbering process and place Affinity Designer pages with "Place Image" feature. Do we all remember bug with linked files that were really embedded? Catalogue made in designer with full resolution images took about 2GB of disk space, imagine that I use this file on 120 pages as placed image with different artboard chosen - My 16GB RAM MacBook Pro looked like that every time I opened the files, it grew to to about 60-80 gigabytes and hang my machine after few minutes. Beta got few updates - and then there was the feature where it could convert Artboard to a Spread - kudos to developers for that. I had a file that was usable, software with every update was more stable.
From that time I mainly used Publisher and Designer/Photo as a support. I continued the project, when finally I got to the point where I could add missing content, photos, drawings. So I started working on it, I was so absorbed with photos and text , that I had no time to draw our products. At the time we were looking for apprentice, we recruited a girl with an 2018 iPad and Apple Pencil. I bought her a copy of Designer iPad - she never used a software before but after few days and with my support she draw first product - it looked great so I told her: listen I like how you draw this products could you draw the missing ones? She agreed. Affinity file format is cool, we were exchanging files back and forth with almost no issue (except fonts but we found a workaround).
Finally after almost three months of tweaking, changes, discussions and working sometimes 12-16 hours per day I exported pages and a cover and uploaded onto print company server. It passed verification process, but until I saw the physical copies I was nervous and kinda afraid because if something would be messed up it would be my fault no matter what.
Everything was printed properly and it looks good to my eye. Ufff

I can tell that I found my passion and built some kind of career based only on Serif's products: I bought Photo, Designer, Designer iPad and two Workbooks, I would definitely buy Publisher minutes after it hits the Mac AppStore. Thank you for producing such a great software. The work is so fluent and so enjoyable inside your apps - keep working. I wish everyone at Serif Happy New Year! Keep improving great products.
Bugs I encountered in the process:
Embeded/linked files even when linked are embeded Copied vectors from Publisher are pasted as rasterized pixels in Photo/Designer Export bugs - elements linked via Affinity Designer Artboards aren't exported properly Replace all crashed the app Moving single page in facing pages document = crash Removing one page in facing pages document = crash After many hours app become sluggish - closing the document does the job App cache in library sometimes exceeds 20GB If you have any questions feel free to contact me. I've been working through the Help files for Publisher 1.7.0.192.
Regarding work with the Text tools, would it be possible to assign a toggle key that would allow the user to temporarily transform the Text tool into a Move tool while the toggle key is held down for the purpose of moving or resizing the Text frame/object, or for deselecting the Text frame/object?
In the Adobe products, this is possible by holding down the Command key.

Yes, it's in the print options > Click on "Range and Scale" and select "Document Layout" from the pulldown menu. In the appearing "Model:" pulldown menu select "Booklet".

It´s a basic function for me, to make spreads with more than 2 pages. Maybe 3 or 4. InDesign does that well and i hope so you will add this function

When exporting a CMYK document with a grayscale image to PDF, this image is converted to CMYK when it should remain in one color (black). Perhaps it is already when importing into Affinity Publisher that the image is automatically converted to CMYK but we can not see it because there is no preview of color separations. It is essential to keep the original settings of the image. Thank you for your reply.

This build has been issued to fix the 'Failed to Save Document' issue that some testers are experiencing with build 162.
This issue could arise if Embedded Documents were placed on master pages or were duplicated on regular pages.

Is it possible to automatic rename a colour with the correct CMYK values? For example C=100 M=0 Y=0 K=0 instead of "Light Blue” or "MyColour5".

I read somewhere on the forum that they are working on a functioning bleed & slug view also with designer - lets hope it's a more simplified procedure and hopefully be able to setup bleed in a new document defaults - and lets hope it prints - as I recently tried printing a 32page doc with all the bleed settings: document setup 3mm, + master properties 3mm + page properties 3mm to print with 3mm - resulting in NO BLEED --- FFS
