I have really enjoyed using Photo Affinity but the new version frustrates me to the extent that I revert to the old one!  Take a simple case where you want to crop a photo.  The regular menu lets you select the crop tool and you can apply it to crop and straighten the image.  Now what?  The old version had a sub menu that made it easy to click on "Apply".  Surely there is a way to use the ptogram at least as effectively as the original version!

What do you mean by "original version"? As far as I know, clicking the Apply button in the Context Toolbar has been available since the very beginning of APhoto, i.e. from version V1.
