Apologies in advance if I being completely stupid here...

I can't for the life of me find the "Field" section, where you can change things like Author, Tags, Title, Subject etc?

On Publisher 1, it was View >  Studio > Fields

Any help much appreciated!

Ok, it’s solved. The German translation was a bit confusing.

If you are using the macOS, you can type the name of an item in the Help menu Search field & get a pop up list with among other things any menu item where it appears in the UI. So if you type "field" in the English UI version, among the many menu items you will get "References > Fields" & if you hover the pointer over that the Window menu will unfold with a huge floating arrow next to the References > Fields item.

I assume this would also work in the German version if you use "feld" as the search.

Note that this should work in any app that uses the standard macOS help system -- it is not unique to the Affinity apps.

Are you looking for the Fields studio panel or the Fields menu item? The panel is in the "References" submenu of the Windows menu.

@Gail H: Are you in the Publisher Persona? You won't find it in the Designer or Photo Personas.
