I have taken text from a website. If I copy it in front of a dark background, the black text appears in a white field.

How can I remove the white background? The publisher shows me no setting for this.

How have you 'taken' the text? Did you select it as text on the webpage? Did you use a Screenshot? If it is text then you should look at the Character Panel for the Background Colour.

I have never mastered color management, period, so I cannot help with that.

Assuming this is actually a text layer & not a bitmap, & if Bruce's suggestion does not work, if you don't already have it open, you can try using Window > Text > Text Frame to open the APub Text Frame panel, & with the text layer selected, in that panel set the Fill: color to none (click on the small white circle with the red slash through it).

This will remove any color from the frame of the text.
