As MEB very helpfully mentioned in this topic, you can assign a keyboard shortcut to the Break Curve action to speed things up a bit. I have been using Shift+B for that.

Would this be used to cut a circle/hole in another shape so, when saved and later placed over a photo, the photo shows through the hole like a keyhole?

A knife tool is used to cut through strokes to break a curve into one or more curves. Typically, it creates open curves without fills so it would not cut holes in a shape. For that, you can use the geometry operations available on the Layers menu or toolbar to combine two shapes, like with subtract or combine.
