No, you don’t need to uninstall v1 first and indeed it is preferable to only uninstall v1 if you want to after first launching v2 as v2 will ask if you want to migrate any v1 content into v2.
Which operating system/version are you on? Can you give any further details?

Not sure why all three are not opening for you?
But you could maybe try a ctrl launch of Photo.
Go to Applications > Launchpad. When it opens find the Affinity Photo icon.
Before clicking on it, first hold down the control key on your keyboard and then click the app’s icon in Launchpad. Keep holding down the control key until you see the attached window open.
The first three items should be preselected, now click the button marked 'Clear' in the bottom right corner.
Hopefully this will clear whatever internal issue the app was having and allow it to launch correctly.
If this works then you could try the same thing with the other two apps.

Before clicking on any of these apps to run them, hold down the CTRL key. If you have the app in the Mac Dock, try clicking & holding on the Dock icon until the context menu pops up. Then hold down the CTRL key & choose "Open" from that menu.
