I'm having a lot of trouble reproducing this here at my end, wich version of the app is it you are using and one which version of iOS?

You can’t apply a dash pattern if the stroke has a pressure profile applied. Tap on the graph in the Stroke Studio and press ‘Reset Pressure’ to fix the problem.

I wondered about that, too, but in the video it does not look like there is a pressure profile assigned:

You're welcome, @Alfred. I inquired only because it seems odd that resetting the pressure profile seems to have resolved the issue. Unless possibly it was very slightly off from 100%, such that it was not visible in the video.

It certainly isn’t visible in your screenshot, but the fact that my advice solved the OP’s issue does tend to suggest that it was very slightly off.
