When importing PDFs, is there any way to have text paragraphs stay intact as paragraphs, instead of breaking into individual lines? I want to convert a ton of docs done in InD but can't do this way as would be too much work. Also tables come across with individual cells as line segments. Any solution for that issue too?

Import of the text in a PDF file is dependent on the structure of the file. If the text is broken up into small chunks you’ll probably be better off copying it in a PDF viewer and pasting it into a text frame in the Affinity app.

If you Open the PDF (vs Placing it) you'll get a dialog that offers you some control:
