New Mac Computer specs question

My boss just gave me the luxury of buying whatever Mac I needed from the Apple Store-desktop iMac. When given this opportunity, should I get higher speed processor iMac or lower processor but more cores? I will be loading the machine with lots of apps (Designer, Photo and Publisher) then I will need to do some entry to novice video and motion editing. Would like peoples' feedback!! Also a RAM suggestion would be great!

More RAM. 

I went with more cores on my desktop and was happy.

Save money on the number and speed of the cores and spend the difference on RAM. 

32 to 64 GB of RAM.

Did I mention RAM?

I would think all iMacs are quad core now (unless you opt for cheapest 21,5" model...) There is still some differences in processors (i5 and i7), some site might have test results... but I think any quad core is good enough.

16 GB RAM is minimum, and if some else is paying we can claim 32 GB is minimum.

Only until the end of the year, the boss is paying for it. MORE RAM.

Next year you will need i, save on some of the hardware and always get more RAM than you need now because you will need it later, I promise you.
