The attached image shows what I mean, the gradient doesn't follow the shape containing it. I want it to start small and end large; ideally I'd just have two Gradient Fill tools, one at the start and one at the end. Quote

You can use the Conical fill. 2 points define the light blue outside edges, and a further 2 will help the pink fan out. You can even add a further 2 to add an off white core.
