Still need to honour spot colours in .eps file format
.eps is a standard format for distributing logos and other spot colour printed items since the year dot. 

I've needed this since V1.

The colour palettes need to 'stick' with the documents too. I don't want to have to keep resetting my colours.

In that case you need to create a document palette by clicking on the burger menu in the Swatches Panel and selecting Add Document Palette... option.

Agreed, particularly when opening an EPS, but…

… the 20th century has called and wants its EPS back.

I've been requesting from clients and distributing to clients logos primarily as PDF since about 20 years now.
EPS is a relict from a distant past and should finally retire for good.

Have you heard that Microsoft Office no longer supports EPS files. From 2017 or 2018, I can't recall.

The point is EPS is being honoured by fewer and fewer applications. You, and your clients, will be best served by following loukash's advice. Sooner, rather than later.
