The cap options in the Stroke panel set the shape of the start & end of strokes. This has nothing to do with the overall shape of an object (like a donut or ellipse) so unless for example you set a stroke start or end shape (like an arrow) for your donut you won't see any difference regardless of the cap style you use.

If you want to add round caps to a donut shape, you might use these workflow (but converted to curves):

  1. Create donut
  2. adjust angle and size. Use numeric input to get pixel-exact size and position.
  3. add 2 circles and position them at the edges. use transform panel to set pixel-exact size and position
  4. layer->geometry->add

Alternatively, you may use the node tool to create a perfect half circle at the edges, but i found this more complicated (no option to use numeric input)
