How do I access alternate characters in an Opentype font?  in Publisher. or any of these tools. i know there is old thread about Designer but no luck such way.

In Publisher there is a set of Alternates in the Typography panel available from Text > Show Typography.

Not all Opentype fonts have alternate characters, some have one others have many. Here is an example from EB Garamond. You can set individual letters by selecting it or words by having the text caret in the word, here is is in "fish".

Mac Pro (Late 2013) Mac OS 12.7.6
Affinity Designer 2.5.5 | Affinity Photo 2.5.5 | Affinity Publisher 2.5.5 | Beta versions as they appear.

I have never mastered color management, period, so I cannot help with that.
