To get compound, hue, luminosity, etc masks I have to go to the menu bar>layers>live mask layer>options-see 2nd screenshot. It's hard to say for sure, without knowing which YouTube tutorial you're watching, and what you get. But my guess is the tutorial is out-of-date, and not made using the latest version of Photo.
