When you try to reverse the gradient, whatever color was picked as the background color changes the STROKE color to that color with NO gradient... You have to apply a gradient to the text using the Gradient tool. If (like me) you want a solid fill for the text you must set the gradient to have the same colour for the start and end colours. What is extremely frustrating is the fact that to date I haven't been able to figure out how to get the gradient to be applied to something other than left to right, I cannot get it to go vertically.
