White balance will correct the selected shade of grey, in the same way as it would correct (for example) a particular shade of blue, but there’s obviously no way to remove an overall colour cast if you don’t know what colours you’re dealing with.

And if one use the white balance picker button on the bottom left, it does not seem to work with a black and white photo ?

It works on b/w photo.

I speak about the fact that you put your finger or your pencil in a withe area of the photo to use the white balance.
