I'm trying to cut text that's been converted into curves out of a logo shape which is also curves. When I select them both and apply the subtract tool, it deletes everything and I'm left with just a blank layer.  Neither shape has a stroke, they're just simple curves, and they're the only two objects in the document.  Any help would be appreciated, thank you!

Could you please provide a copy of the Affinity file before the subtract operation so I can investigate this further for you?

Easy way, change the layer blend mode to Erase

If you really want to punch the shapes through the black shape this is what you have to do...

  1. Select the Node tool (A)
  2. Select the black shape layer
  3. On the context menu above the workspace, in the Action: section click on Close Curve
  4. Now select the white text layer and do step 3
  5. Now select the black shape and the white text layer and click on Subtract (Layer > Geometry > Subtract)
