In the meantime, as a workaround, you could start your new document by adding a Layer (Layer > New Layer from the menu, or use the icon at the bottom of the Layers studio panel).

Then, by default, anything you create will be in that Layer. At any time, you can select that layer in the Layers panel, and then use Layer > Transform > Flip Horizontal (or Flip Vertical) and the layer (and its contents) will be flipped. Because everything is in that layer, that should be very much like flipping the canvas itself.

I think that if you just select all (you can check Layers-panel shows all hilighted) you can do Layer>Transform>Flip Horizontal/Vertical and that does just the needed thing.
