The videos pretty much explain this issue better, as it comes with a comparison between OpenGL and Metal rendering.

How to Reproduce:

  1. Enable Metal and Restart Affinity Publisher (Preferences -> Performance -> DIsplay -> Metal)
  2. Create a new document (1280x800).
  3. Create a new page.
  4. Switch between the pages; note how the gridlines won't display on Page 2 when you're working on that page.

NOTE: I'm using a MacBook Pro (13-inch, 2017, Two Thunderbolt 3 ports) model, with the Integrated GPU.

Worse here in that if I add pages to the document I get no grid view on any pages and then if I change the grid settings I can sometimes get the grid to show on Page one only.

I have never mastered color management, period, so I cannot help with that.
