When I add an Auto-Correct entry of my own, for instance, convert three asterisks to an em-dash, the auto-correct does not occur in document text. I have also tested some of the built-in auto-correct entries and the ones I've tested do not function, either.

That works for me. Note that the auto-correct settings are specific to a language, so you need to enter them in the right part of the Preferences and you need to make sure that you specify that language in the Character panel for the text you're entering into the Text Frame.

This seem to be behaving fine for me also. Like walt mentions it is saved per spelling language, but also requires you to press space or enter after typing to word
