Change document resolution

If you change the resolution in a document, from 1200 dpi to 300 dpi, the text layer become to big, do not keep the correct ratio

I've just tried this in the current beta and I chose '300dpi' in Document Setup, then chose to 'Rescale' and hit 'OK' and everything looks exactly as expected - the text has resized appropriately.

 

Does this not happen for you?

Welcome to Affinity Forums :)

This issue was already fixed in the current Beta (that's probably were Matt tested). I believe you are using the Mac App Store version which doesn't include the latest improvements. If you are willing to give the Beta a try, you can get it from here. It can be installed along with the Mac App Store version since they don't interfere each other. Just remember that currently documents created or saved with the Beta cannot be opened in the MAS version until it gets updated (this shouldn't be an issue in the future as both will use the same file format specification).
