I think you'll find it does remember your chosen styles. Have you tried: Opening the PDF. Changing one of those font selections. Closing the PDF, then reopening it again. If you do that, I think your change from step 2 will show up again. They do for me. But you're still going to get the dialog, because there's no guarantee you want to use the same replacements each time, so you're allowed to accept the existing suggestions, or change them.
