As workaround you can use the available print option to impose the pages (not spreads) for book or booklet, and then, instead of printing them on paper, "print" the result to PDF. – Unfortunately this workaround offers less or none options regarding the PDF setting (color space, resolution, PDF-version). On mac you find this option by system default in the lower left pulldown menu of the print options window, on Windows some users reported to have an according feature, too or are able to install a print-to-PDF driver. A search in the forum for "booklet" and/or "impos" (impose & imposition) will find topics with more detailed hints and screenshots of various print option windows, which may vary depending on your installed printer software.
