You don't have to, they are totally different applications.

If you want to you can just drag the Beta to the trash, you may need administrator privileges depending on how you set up your Mac. The other files will be found in < /Users/YOUR LOGIN NAME HERE/Library/Application Support/Affinity Publisher Beta > and you can trash that folder "Affinity Publisher Beta" too. I would just drag the Beta application to the trash and be done with it if you really want to get rid of it, no real reason to.

I have never mastered color management, period, so I cannot help with that.
