@hobbo68 Welcome to the forums :)

I noticed one small difference in the path your error message shows and where on my system (Win 10), the Photo.exe file is located. I think the folder App should be located just before the Photo.exe in the path. Example on my system;

C:\Program Files\WindowsApps\SerifEuropeLtd.AffinityPhoto2_2.5.5.2636_x64_3cqzy0nppv...\App\Photo.exe

I'm guessing you are like most, updating from within the app. So it should look in the right directories, I don't know why it's not. I had no issues updating.

Have you tried in File Explorer following the path spelled out, to see if the Photo.exe file is there? IF there's an App folder and the Photo.exe is inside it?

Where did you purchase the apps, Serif Store, MS Store? For example you might try logging into your account at the Serif store, go to V2 Licenses and Downloads. Then under the correct OS, Click on the down-arrow, to select the Correct Download type. I'm guessing you would have the MSIX version by the path in the error message and you get prompted in the app for updates.

Applications installed from the Microsoft Store will have different locations for different versions.
Your link is to the v2.5.5 location.
You will need to update the link to the v2.5.6 location.
