I'm using affinity designer 2.

I'd give some text. I'd like to split up the text so that I can manipulate the position (and possibly the shape) of the letters.

How can I do this?

Which is available from the Layer menu. It is also on the context toolbar when the text is selected with the Move Tool, although it may be so far to the right that it is in the >> submenu.

... and is also available in the pop-up menu via right-click on the text frame with the Move Tool or one of most* other tools.
* the Text Tool / the Colour Picker Tool / the Vector Crop Tool and the various pixel editing tools excepted for instance
