Changing the text in a symbol stops font styling changes from syncing, this would be really useful to have as a separate link in the symbol

 

Applying Bold to the text only changes the other symbols if the text was unchanged

Green: no Changes

Red: Text changed when not syncing

Editing multiple text symbols so that they have different text entered requires that the sync in the symbols panel be temporarily disabled in order for the text to only affect the selected symbol and text, when Sync is turned off and the text is edited that text object becomes detached and will behave independently even if Sync is re-enabled, the detached text is indicated by the dashed orange line next to the text object in the layers panel.

Since the text object within the symbol is detached this means that any further changes to the local text formatting (E.G setting it to bold text on the context toolbar) on that object won't have any affect on any other symbols, this is by design.

I've linked a similar query that has come up regarding this before on whether or not it's possible to re-sync symbols.

However, if you were to apply a Paragraph/Character Text style on the symbol(s) and then edit the text style properties and apply them from the text style menu, this will affect all text layers with that particular style attached, regardless of if they are a symbol or not.
