The names like PDF For Print are Presets, that assign an initial default set of characteristics to the exported file. You can change those characteristics, as you did when you changed the DPI. However, once you change any of the characteristics, you are no longer using that Preset as it is a name for a specific set of characteristics. What ever – it would be fine to see if the 72 dpi means "for print" as a big PDF-file or the smaller "for Export" (example: 12 MB or 4,5 MB). You pick your initial Preset, and then modify it. Don't worry about the Preset name after that; it was simply a shortcut to select that initial set of export settings.
