In this instance I am referring to the Apple Pencil 2nd Gen on the latest iPad Air.

I like to draw curves using the Vector Brush Tool - Set to Solid Pen with Pressure Sensitivity and I usually set Size Variation to 100 and Opacity to 0.

I find when applying the most pressure for the thickest stroke size, whether I start with high pressure or end with low pressure the result is often not very tidy and I usually have to go in and delete a load of nodes. The problem is when applying a lot of pressure from none or removing the pencil from high pressure - it usually results in the curve being laid down getting messed up.

Anyone got any tips on how to produce nice smooth curved lines with variation stroke, without and up with this (see pic attached)?

If you’re more concerned with the end result looking good, I’d use a combination of the Pen and Smooth corner tool. Alternatively, you could use the Pencil with a Rope Stabiliser, and used the stroke graph in advanced settings to get a nice, tapered line
