I always go to the preferences and change to Filler text as text this is in General tab of Preferences. If you already have some text in a frame go to Text > Expand > Expand Field (not exactly obvious) then you can select text and make it bold . Making text into curves is by selecting the frame and going to Layers > Convert to curves.
