I can confirm this is happening as you have converted the Quick Shapes to a Curve object - this is a destructive conversion (ie you can convert from Quick Shape > Curve, but not Curve > Quick Shape) and once an object has been converted to a Curve, you can no longer use the Corner Type options from the Quick Shape tool. As can be seen in the second recording you've provided, these options are working as expected, then you select the 'To Curves' option and you can see the object in the layers studio is now a Curve object and the Corner Type option ceases to work, as expected. One improvement of the app would be to not offer these context toolbar options with a Curve selected, however you are seeing these still as you have the Quick Shape as the active tool.
