My version of affinity Photo has stopped working in crucial ways.

First sign was loss of link to Affinity Publisher.  After that I lost (and could not recover) the image adjustments such as levels, curves etc. and also many option with the View/Studio panel were "greyed out".  RAW files could be loaded but not "developed" in any way and there was no option to cancel the operation meaning that I had to use Task manager to even close the program.  

Any idea what has gone wrong?  Also worringly I am not able to uninstall the program !  The uninstall process stalls at "Preparing to remove".

Please explain more about that. The only link from Photo to Publisher is via File > Edit in Publisher.

Publisher, however, has both File > Edit in Photo and the Photo Persona.

A screenshot showing the workspace and the pulldown from View > Studio would help diagnose that one. But perhaps you've used View > Hide Studio (which would explain things being grayed out). But before you do anything to fix, please keep reading.

That sounds like you don't have the Context Toolbar showing. View > Show Context Toolbar would fix that. But first: Combined with the rest of your description (but not definite without a screenshot) perhaps you've hidden the User Interface by pressing the Tab key (shortcut for View > Toggle UI). If so, pressing Tab again would bring everything back.
