So... when you've got a shape with a stroke applied and you Expand Stroke, you end up with two shapes - the original shape and the new outline of the stroke. That's the expected behavior. However, it doesn't work the same if it's an image. If you have a stroke applied to an image and attempt to Expand Stroke, you get only one shape - the stroke. The image disappears. Cheers!
