Hi DinoDoesStuff,

Welcome to Affinity Forums :)

To erase an object you can use the Erase tool as LilleG described. Note that it doesn't perform any geometry changes. Instead it automatically creates a mask that you can change/edit independently.

 

You can fill vector objects from the Fill, Stroke and Width buttons on the context toolbar within certain tools (Move, Node, Shapes tools etc)

 

The eyedropper is on the top of the Colour panel on the right of the interface (as well as in other dialogs when it makes sense).
