After a year, I've found a workaround to update global colors that are pasted into another document.

Needs: You need to have the same global color names in your document. (You can export and import or create new global colors)

1. Do normal copy and paste

2. Click on each global color and then close it by clicking elsewhere

Far too complicated, but yes it works. I would have made it easy for myself and copied the HEX values.
