I have found the lasso tool under the node button, which when used with the (virtual) alt key (on iPad) allows freehand selecting amongst vector items that have already been selected with the arrow button. It’s strange that you have to select twice, but this works well, and lets you move that freehand selection.

However when I try and change the colour of the selection that I have just moved, the colour changes for all the items selected at the start with the arrow button.

I am able to move just the selection, but not change the colour of just the selection.

How do I change the colour of just the items selected with the lasso tool?

Welcome to Affinity Forums :)
The Move Tool (what you called the arrow button above) is the tool that actually selects objects. The Node Tool only selects and manipulates nodes of these objects.

So when you use the Node Tool  in "lasso mode" to draw a selection you are only selecting and manipulating the nodes of part of the initially selected objects, not the objects with the selected nodes themselves, thus if you change the color at this point, ALL object selected (not just the ones with nodes selected) will be affected.

If you want to change the colour a few vector objects, select them with the Move Tool (hold shift and click on each one to add them to the selection) then change the colour.

If you are dealing with a more complex case where it's difficult to select the objects directly with the Move Tool, please post a screenshot, showing what you are working with so we can better help you.
