I have to say that all text will always have some sort of formatting applied, turned on. Which application are you using? You'll need to change the various properties to what you want. This can be achieved using the Paragraph Panel and or the Character Panel. Paragraph Styles are your friends. I have never mastered color management, period, so I cannot help with that.
