How to set spelling language to default?

I’m not entirely sure of what you mean by “default” but you can:

1. Create a new document;
2. Go to the Text Styles panel;
3. Right-click the “Base” text style and choose “Edit Base” from the menu;
4. Go to the “Language” section of the dialog;
5. Change the “Spelling” setting to whichever language you want (if a dictionary for it exists);
6. OK the dialog;
7. Press the Text Styles panel “hamburger” menu icon (top-right of panel) and choose “Save Styles as Default” from the menu.

If that’s not what you want then we may need more details about what you are trying to and what you mean by “default”.

Note: This will only change the spelling language for new documents, not existing ones.

Sorry @GarryP I can not finde "save Styles as Default" in hamburger icon, can you help me?

In your screenshots you are using the Character Panel.

You need to use the Text Styles Panel (menu “Window → Text → Text Styles”) to find the correct hamburger menu.
