It's really late, and I'm using a new installation of Publisher on a new computer...

I would have sworn there was an option in the print dialog to print spreads. Not a booklet or book, but just the spread.

That option isn't here. Am I crazy?

To print spreads use the "N-up" option. Set "Across" to 2 and, if the document starts on a right page, set "Skip" to 1. If you don't set margins (Left, Top) it will be placed in a sheets corner/edge. A right margin needs to get set via an according "Scale" value.
