When trying to insert data fields from an xlsx I made, the month values are not being recognized correctly. The other fields seem to work fine, any ideas how to fix? Trying to split up the month portion for better formatting in my document.

The problem is using a formula for the Month field. You could export the Excel file as a CSV file and use that in the Data Merge. Or you could perhaps force the formula to use the actual word instead.

I have never mastered color management, period, so I cannot help with that.
