Affinity Publisher 2 for Desktop lets us choose the opacity of color stops on the layer FX gradient tool.

Affinity Publisher for iPad 2 does not.

I tried selecting "no color" for the color (color swatch with red line thru it) and the app crashed.

I am using this effect with blend mode set to overlay to darken a picture box behind text on a business card so the text is more readable.

Will we get full feature parity between the desktop and iPad?

I doubt we will see full parity anytime soon. Most missing features can be completed in other ways though. For example to edit opacity of Gradient you could use the Gradient maps destination blend range, set a one or more points and reduce the opacity by dragging the curve down. In the example below I have set the Gradient centre point (green) to 50%.
