A lot of the tutorials I have been watching raise 2 more  questions for me. The first is; How can I make the work area (artboard) cover the entire work  area? For example some tutorials start out with a completely white area that covers the entire work bed. It seems like a given but I cannot figure it out. The second is; The horizontal/vertical center lines that seem automatic in tutorials, however I cannot find them . I assumed they were in Veiw with the ruler. No luck.  Can someone steer me the right direction?

I am not entirely sure if this will help or if it is indeed what you are wanting.  You can zoom in to fill the window with most of the Artboard. 

You should change the snapping candidates to snap to the centre of the artboard / canvas.

I have never mastered color management, period, so I cannot help with that.
