When I try to open a png, jpg, or other non-affinity file from the File menu, they show up greyed out. Is this expected behavior

It is if you are using Publisher. This is because Publisher is a Page based application, you can Place images onto a page but you have no page in a jpeg, png, tiff, psd etc file. Strictly speaking we don't have pages in .afphoto documents either but the three applications share the same basic file structure so we can open a .afphoto file in Publisher.

Mac Pro (Late 2013) Mac OS 12.7.6
Affinity Designer 2.6.0 | Affinity Photo 2.6.0 | Affinity Publisher 2.6.0 | Beta versions as they appear.

I have never mastered color management, period, so I cannot help with that.

That is the case in Affinity Publisher. It seems a daft limitation since you can right-click an image file in Finder and pick Open With > Affinity Publisher.

[Also, if you switch to the Photo or Designer Personas in Publisher, then File > Open does allow opening image files. Strange. I think that worked in an earlier release, but not now.]
