Specific organic line width

Hey!

im trying to figure out how to make this kind of graphic without pulling my hair out and going nuts. I’ve tried with illustrator but can’t make it perfect. Anyone have any quick help to offer?  The “E” image is the most relevant in this case, but I will have to try and make illustrations such as the colorful image.

I think in stroke settings, you can decide which side of the stroke increases in thickness, but not %100 sure. At least the graph editor will get you some of the way in tapering the thickness of each individual stroke
