Regarding the dimensions disappearing from the Info panel as soon as you release the mouse button this is by design. The info panel only shows/reflects the cursor behaviour (position, distances etc) in real time while you move it/perform the actions. If you want to know the dimensions of the active pixel selection check/use the Transform panel (make sure there's a selection marquee tool active/selected).
