Hi mogu and Rriver,
Thank you for letting us know. We've reproduced this here and have passed it on to development to be fixed.
In the meantime the workaround of switching language to English Rriver has mentioned will allow you to use those fonts.

This happens on my environment as well (M1 Mac mini / macOS Big Sur 11.5.1 / Affinity Designer 1.10.0 App Store version).
In my case, though, some other Japanese fonts that I installed myself are missing from the list, too (e.g. Adobe Fonts and Google Fonts, etc.).

I just found out that the fonts are listed when I changed the Language to English in Preference > General. But it disappears again when changed back to Japanese.

The font "Hiragino-Sans W0~W9" are not displaying at AD10.0

operating system and version：
macOS Big Sur ver.11.4 / Affinity Designer 1.10.0
What happened：
Some fonts that I have installed in the past are not available in Affinity Designer.
These fonts are registered in the Mac "Font Book" and can be used in other applications.
I have attached a screenshot showing an example below.
Although "はれのそら明朝" exists in the Font Book, Affinity Designer does not show up when searching for it. I have looked for it in other ways but could not find.

I cannot write wz English so use Japanese
英語記入能力がないので、日本語で記入します。テキスト入力で ひらがな入力後に変換（スペース）をおして 変換候補がでます。 目的までスペースで下部移動できますが、いきすぎた場合、カーソル上矢印キーで上に上がりません、文字横の数字も選べません。文節を長くしたりの調節もできません（本来は左右矢印）ひらがなで入力して変換、つづけて ⌘＋スペース で英語入力に切り替えて、英語入力しようとすると、ダブって入力されます
しかしながら、レイヤーパネルでレイヤー名を日本語で入力しようとすると、何の問題もなく いまのとこ完璧です！
パレットの名前の入力なども完璧です
